If you didn't already know, I make weird/healthy dishes all the time. Bean brownies are a normal food. Flaxseed bread- normal. This dish however was found by my hubby. Who isn't necessarily a fan of my weird healthy experiments.

Although, to his credit when I tell him how wonderful a new concoction is, he is always suspicious and doubtful and hesitant but if I carry on enough how good it is he will usually try. (we have been married almost 36 years...experience matters)

85% of the time, he will make a face then try my new dish, then make another face and ask why do I always believe you?

So when he showed me this hardboiled egg chocolate pudding Instagram recipe posted by deliciouslybold, I was surprised and very suspicious. I mean 6 hard boiled eggs? But like I usually do my weird food experiments, the deliciouslybold lady, oohs and ahs over how good this creamy chocolate pudding is, how much it tastes just like chocolate pudding. So you think...maybe...

We tried it...and it tastes exactly like chocolate pudding! EXACTLY-taste and texture!

Chocolate Pudding

6 Chilled Hardboiled Eggs

1/2 cup milk (we used almond)

1/3 cup white sugar

1/3 cup coco powder

Blend in high speed blender and then chill. (note, add the mild first then the eggs and then the dry ingredients. A tip I got from another cookbook)

Over night, I wondered if the chocolate pudding would separate and get weird. Nope, even better after a night of chilling. Yesterday morning, I had left over chocolate pudding for breakfast. SOOOO GOOD. My hubby who has an insanely clear pallet agreed it tastes exactly like chocolate pudding. We both agree. (A better endorsement you will not get)

Last night, I wondered if I could make banana pudding out of this recipe.

Yes you can, although, it's not quite as spot on as the chocolate pudding. But a fun recipe experiment. My hubby didn't try this version😊

Banana Pudding

6 Chilled Hardboiled Eggs

1/2 cup milk (I used coconut milk- drinking not the heavy creamy kind)

1/3 cup coconut sugar

1 banana

1 tsp vanilla extract

Blend and Chill Tasted like a banana custard.

Enjoy, share abundantly. Try new things...eat pudding for breakfast.
